Vines are located between Béziers and Nîmes. This extended area gives a wide diversity of soils (clay-limestone soils, stony terraces, rolled pebbles).

Vinification & ageing

Grape harvest at night. Upon receipt, destemming and crushing, cold prefermentary maceration in a temperature-controlled stainless steel tank to extract color and aromatic precursors. Fermentation around 20-25°C, gentle pumping over and rack and return. Short vatting. Running off and marc pressing, blending of free run juice and presses, malolactic fermentation. Ageing is partly made in stainless steel vats and with wood. Fining : No. Filtration: Tangential.

Sensory Palette: Gourmand, Raffiné

Visual: Garnet red color with purple reflexions

Olfactory: Complex, spicy, with red fruits and violet

Gustatory: Fruity, round, with a licorice finish

Serving temperature: 16-18°C°C

Syrah

Originally from Savoir and Ardèche, this grape variety is emblematic of the northern part of the Côtes du Rhône. It is grown all over the world, representing 4% of the world’s vineyards. This black grape variety is used to make red, rosé, still and sparkling wines, both dry and sweet. A varietal with character, it is spicy and tends towards notes of red fruits and violets. It evolves very well over the years with notes of licorice and leather. It has good aging potential, depending on the appellation.
