Vines are located between Béziers and Nîmes. This extended area gives a wide diversity of soils (clay-limestone soils, stony terraces, rolled pebbles).

Vinification & ageing

Harvested at night to avoid any oxidation of the grapes and to keep a maximum of freshness Gentle pressing in an inert pneumatic press. Cold settling of the juices for 7 days. Static cold clarification, lees filtration, and reintroduction to enhance aromatic complexity. Low temperature fermentation (15-16°C). Fining: Pea proteins and Bentonite. Filtration: Tangential.

Sensory Palette: Expressive, Mineral

Visual: Pale yellow-green color with silver reflection.

Olfactory: Expressive, mineral, with citrus notes.

Gustatory: Lively, fresh and saline.

Serving temperature: 8-10°C°C

Sauvignon blanc

Native to Bordeaux and the Loire Valley, Sauvignon is used to make sweet or dry white wines with a strong perfume. But Sauvignon also exists as a gray grape variety. Sauvignon often has a lemon-gold color with green highlights. It reveals aromas of boxwood, citrus, flowers or white fruit, and when dry, is mineral. This grape variety is very common in the Nordic countries, but is grown all over the world.
