The vineyards are located between Béziers and Nîmes. lt offers a wide variety of terroirs (clayli mestone soils, stony terraces, rolled pebbles).

Vinification & ageing

Night harvest of grapes. Upon receipt, erasing and crushing, cold pre-fermenting maceration in a thermoregulated stainless steel tank to extract colour and aromatic precursors. Fermentation with temperature contrai (20-25°C), gentle pouring over and delestage. Short vatting. Running off and pressing of the grape pulp. Assembly of flows and presses, malolactic fermentation. No fining. Ageing in stainless steel tank. Filtration : Tangential.

Sensory Palette: Fruité

Visual: Garnet colour with purple reflections

Olfactory: Notes of morello cherries, wild strawberries, pepper, cocoa

Gustatory: Ample, supple, g reedy, on red fruits

Serving temperature: 16-18°C

Grenache

Originally from Spain, this grape variety loves the sun and thrives in a variety of terroirs. This variety is used to make distinctive red wines and aromatic, fruity rosés. Grenache accumulates sugar very well and therefore often produces high alcohol red wines. The red wines are very rich, with aromas of red and black fruits underlined by spicy, cocoa and coffee notes. As they age, the reds reveal aromas of red fruits, spices and garrigue.
