The vineyards are located between Béziers and Nîmes. lt offers a wide variety of terroirs (clay-limestone soils, stony terraces, rolled pebbles).

Vinification & ageing

Night harvest of grapes. Upon receipt, erasing and crushing, cold pre-fermenting maceration in a thermoregulated stainless steel tank to extract color and aromatic precursors. Fermentation with temperature control (20-25°C), gentle pumping over and delestage. Short vatting time. Running off and pressing of the marc, assembly of drops and presses, malolactic fermentation. No fining and ageing in stainless steel tank. Filtration: Tangential

Sensory Palette: epice, Intense

Visual: Deep ruby red with purple reflections

Olfactory: Complexe, mêlant les fruits rouges, les épices, des notes de réglisse et de violette

Gustatory: Supple with round tannins and much freshness

Serving temperature: 16-18°C

Syrah

Originally from Savoir and Ardèche, this grape variety is emblematic of the northern part of the Côtes du Rhône. It is grown all over the world, representing 4% of the world’s vineyards. This black grape variety is used to make red, rosé, still and sparkling wines, both dry and sweet. A varietal with character, it is spicy and tends towards notes of red fruits and violets. It evolves very well over the years with notes of licorice and leather. It has good aging potential, depending on the appellation.
