Vines are located between Béziers and Nîmes. This extended area offers a wide diversity of terroirs (clay-limestone soils, stony terraces, pebbles).

Vinification & ageing

Harvested at night. Upon reception, destemming and crushing, inerting, rapid yeasting Fermentation with temperature contrai (20-25°C), gentle pumping over and delestage Short vatting time. Run-off and pressing of the marc, blending of the drops and presses, rapid malolactic fermentation. No fining. Filtration: Tangential Bottling: Use of a screw cap allowing a perfect sealing necessary to preserve a wine without sulfites.

Visual: Dark purple color, garnet reflections

Olfactory: Aromas of black fruits, cocoa, vanilla, spices

Merlot

Native to the Bordeaux region, its name refers to Merle, the French word for blackbird because of its color. Particularly rich in anthocyanins, Merlot has a high color intensity, resulting in dark, dense wines with a deep purple-red color. In warmer regions, it offers an aromatic palette marked by notes of black and red fruit, and develops aromas of plum, black cherry and blackberry. With age, wines made from Merlot develop aromas of jam, licorice and undergrowth. This variety is often blended with Cabernet Sauvignon or Cabernet Franc. Merlot is grown all over the world and is one of the best-known grape varieties.
