The vineyards are located between Béziers and Nîmes. lt offers a wide variety of terroirs (claylimestone soils, stony terraces, rolled pebbles).

Vinification & ageing

Harvested at night. Upon receipt, erasing and crushing, cold pre-fermenting maceration in a thermoregulated stainless steel tank to extract color and aromatic precursors. Fermentation with temperature control (20-25°C), gentle pumping over and delestage. Short vatting. Running off and pressing of the grape pulp. Assembly of flows and presses, malolactic fermentation. No fining. Ageing in stainless steel tank. Filtration: Tangential

Visual: Crimson red color with gamet reflections

Olfactory: Notes of red fruits, blackcurrant, white pepper, undergrowth

Merlot

Native to the Bordeaux region, its name refers to Merle, the French word for blackbird because of its color. Particularly rich in anthocyanins, Merlot has a high color intensity, resulting in dark, dense wines with a deep purple-red color. In warmer regions, it offers an aromatic palette marked by notes of black and red fruit, and develops aromas of plum, black cherry and blackberry. With age, wines made from Merlot develop aromas of jam, licorice and undergrowth. This variety is often blended with Cabernet Sauvignon or Cabernet Franc. Merlot is grown all over the world and is one of the best-known grape varieties.
